How do you have the cable connected to the camera housing itself? Usually the black connectors (part between the camera housing and the foot) break so if it's not connected directly to the housing in some way then there's still a good chance of losing the camera.

The left side cable is attached to the bike and the other end is smashed (very very hard) between two bolts which then goes though the lower joint that connects the base clip to the black connector. The right side is the same except that it's connected to the bolt that goes through the black connector and the camera housing. For this camera to leave the bike it would have to break above the clear plastic mount that the camera itself goes inside.

Sounds good! I have a similar setup except I use safety wire instead of cable. Hopefully everyone takes this sort of care in tethering so Jim doesn't ban our cameras again! :)
